The oesophagus is a communicating passage, usually short and straight, with longitudinal folds that allow it to expand considerably. The muscle layer of the anterior part is striated, and is gradually replaced by smooth muscle posteriorly. The junction with the stomach is almost imperceptible.

In fish, the esophagus is often lined with columnar epithelium, and in amphibians, sharks and rays, the esophageal epithelium is ciliated, helping to wash food along, in addition to the action of muscular peristalsis.
