Plasmolysis occurs in fungi and bacteria when they are kept in hypertonic solutions such as salt solution, sugar solution etc. The concept of plasmolysis is that when they are exposed to the hypertonic solution, water conceentration of the cell is lost and the cell wall gets shrinked. Similarly, when pickles are prepared, salt solution is added so that if bacteria and fungi grow, the water is lost from their cell and it ultimately dies. So, this is an advantage of plasmolysis in fungi and bacteria.
