Rancidity:-
Oxidation in nature damages many things including fatty foods and oils. When the food materials prepared in fast and oils are kept for a longer period of time, they starts giving unpleasant smell due to oxidation, this is known as Rancidity.
- With due time, many food materials containing fats and oils get oxidised in the presence of oxygen in the atmosphere.
- It is also known as Aerial oxidation
- This leads to unpleasant smell and taste which is known as Rancidity.

Substances that prevents:-
- It is obvious that, we will use antioxidants to prevent the oxidation of these food materials
- The antioxidants are actually reducing agents.
- When they are added to the food materials, they don't get oxidises and hence they do not turn rancid. So, it remains fresh for longer time.
