rancidity is a process of oxidation of foods such as fats and oils due to whoch food gives a foul smell. Substances such as nitrogen are used to prevent rancidity.

Rancidity can be prevented by natural and chemical method :-
1. By coating them with edible salt (NaCl)
2.By storing them in airtight container.
3. By packaging them with inert/noble gases. ( This process is done specially by major chips brands.)
4. Storing the food in the refrigerator.
