Saponification is a reaction in which veg oil or animal fat react with NaOH or KOH in presence of heat energy to form sodium or pottasuim salt of long chain carboxylic acid (Soap) and glycerol (alcohol)

Veg oil /animal fat (natural esters) + NaOH /KOH = soap + glycerol
