when we use old, leftover cooking oil for making food stuff ,it is found to have foul odour called rancidity .If food is cooked in such oil Its taste also changes. when oil or ghee is left aside for a long time for fried food is left side for a long time it undergoes air oxidation and becomes ransom rancidity in the food stuff cook in oil or ghee is prevented by using antioxidants the process of Oxidation reaction of foodstuff can also be slowed down by storing in an airtight container

WHAT IS RANCIDITY...???

  • When food items prepared in oil such as potato chips are kept for long time, fat and oil present in them get oxidised by the oxygen, and they start giving unpleasant smell and taste.
  • This condition, produced by aerial oxidation of fats and oils in foods marked by unpleasant smell ans taste, is called rancidity.
  • Rancidity spoils the food material and makes them unfit for eating.

IT'S PREVENTION :  

  • Antioxidants are added. Chips and snacks packs fill with nitrogen, milk , butter , vegetables ,fruits kept in fridge.
  • Air tight container prevent oxidation.
  • Antioxidant like BHA and BHT are added to butter.

   ⇒ BHA : Butylated hydroxy anisole

   ⇒ BHT : Butylated hydroxytoluene.
