1. Villi : villus. [vĭl′əs] Plural villi (vĭl′ī) A small projection on the surface of a mucous membrane, such as that of the small intestine.

2. Peristalsis : the involuntary constriction and relaxation of the muscles of the intestine or another canal, creating wave-like movements which push the contents of the canal forward.

3.Emulsification : emulsification (in digestion) The breakdown of fat globules in the duodenum into tiny droplets, which provides a larger surface area on which the enzyme pancreatic lipase can act to digest the fats into fatty acids and glycerol. Emulsification is assisted by the action of the bile salts.

4.Assimilation : The process by which a person or persons acquire the social and psychological characteristics of a group: “Waves of immigrants have been assimilated into the American culture.” 

5. Digestion : The process by which food is broken down into simple chemical compounds that can be absorbed and used as nutrients or eliminated by the body. In most animals, nutrients are obtained from food by the action of digestive enzymes. In humans and other higher vertebrates, digestion takes place mainly in the small intestine.
