Rice is normally cooked in a closed vessel while other things like pulse, maze, etc are cooked in an open vessel. In case of rice, if it is substantially heated, then they are not at all healthy and all nutritious value is lost. Similarly in case of maze and pulses also excess heating can even spoil the food and can cause food poisoning.
