Food preservation, any of a number of methods by which food is kept from spoilage after harvest or slaughter. Such practices date to prehistoric times. Among the oldest methods of preservation are drying, refrigeration, and fermentation. Modern methods include canning, pasteurization, freezing, irradiation, and the addition of chemicals. Advances in packaging materials have played an important role in modern food preservation. Micro organisms spoil our food. The spoiled food emits bad smell and has a bad taste and changed colour.

Example: The bread left unused under moist conditions is attacked by fungus.

Some of the methods of food preservation are as follows

Chemical Method: Salts and edible oils are the common chemicals used tp check the growth of micro organisms.

Preservation by common Salt: Common salt has been used to preserve meat and fishfor ages. Salting also preserves amla, raw mangoes, tumarind, etc.

Preservation By sugar: Jams, Jellies, & squashes are preserved by sugar. sugar reduces the moisture content.

Preservation by oil and Vinegar: Usage of oil & Vinegar prevents spoilage of pickles bcos the bacteria cannot live in such environments. Vegetables, fruits and meat can also be preserved using this method.

Heat and Cold Treatements :

Storage and packing: Dry fruits and even vegetables are packed, sealed and sold to prevent attacks from microbes
