You begin to digest carbohydrates the minute the food hits your mouth. The saliva secreted from your salivary glands moistens food as it's chewed. Saliva releases an enzyme called amylase, which begins the breakdown process of the sugars in the carbohydrates you're eating.

The food we eat is rich in starchs, when it enters our mouth the salivary amylase gets mixed with it and converts it into a simpler form maltose. Rest of the undigested starch along with maltose enters our stomach and pancreatic amylase acts on the undigested one and converts it into maltose. Later in small intestine maltase enzyme acts on maltose and converts it into glucose and finally is absorbed by the network of blood vessels in small intestine.
