a) Saliva is deeply associated with health or the functions of our body, including teeth and gums. The production of saliva is promoted when we chew food thoroughly. Saliva has various functions including chemical digestion and cleaning the mouth.
b) The function of the esophagus is to transport material from the mouth to the stomach, and to prevent GER by providing an important barrier, that is, the lower esophageal sphincter (LES), to the retrograde flow of gastric contents into the esophagus.
c) The tongue is vital for chewing and swallowing food, as well as for speech. The four common tastes are sweet, sour, bitter, and salty. A fifth taste, called umami, results from tasting glutamate (present in MSG). The tongue has many nerves that help detect and transmit taste signals to the brain.
