The United Nations has several human rights treaties
They include
The Universal Declaration of Human Rights which spells out 30 basic rights but is not basically enforced
The two covenants on Civil and Political Rights and Economic Social and Cultural Rights spell out civil and political rights such as freedom of speech assembly petition and economic social and cultural rights such as healthcare education and so on these are enforced by the Human Rights COmmittee
In addition there is the COnvention on the Elimination of all Forms of Racial Discrimination, The Convention on the Elimination of all Forms of Discrimination against Women the Convention Against Torture the Convention on the Rights of the CHild and the Convention on Migrant Workers and the COnvention on the Rights of Persons with Disabilities all of which have a COmmittee which enforces them.
If you believe you rights are being violated you can send a 1503 Complaint procedure provided you have exhausted domestic procedures
Also the African Union, The Council of Europe and Organization of American States have separate human rights protection systems but the question was limited to the UN
