since it has low specific heat capacity, means that the energy required to change the temperature of the sand is very little. hence, in the day , the sand gets very hot due to the sun and during the night it gets very cold since it loses heat fast to the surroundings

The particles of liquid in desert cooler absorb energy from the surrounding to regain the energy lost during evaporation. In summer this is fast. Hence desert cooler cool better in a hot dry day.
