In order to determine the percentage of of oil from different oil seed there are various methods.  Differential techniques is use to determine the oil percentage by just weighing the seed first and then oil at last.

For the extraction of oil different methods used are
1) Mechanical extraction (i.e using mini-screw press method)
2)Solvent extraction method (like Soxhlet extraction method)
3) Super critical extraction ( advanced technique using CO2)

These methods helps to extract the oil then extracted oil is weighed to determine the percentage of oil from specific oil seed
