You can use following procedure to determine mass percentage of water in fruits/vegetables.

● Determining mass percentage of water in fruits/vegetables -
1) First weigh all fruits as it is.
2) Cut the fruits/vegetables into small pieces.
3) Keep all these pieces in dehydrator and keep for 10 min.
4) Now, weigh the contents again.
5) Calculate the mass percentage of water by formula -
Mass % = [1 - (final weight/initial weight)] × 100
