Sugarcane is crushed to extract the juice, which is collected, filtered and processed to form jaggery and sugar.
The yield of juice, jaggery, and sugar depends majorly on the quality of the sugarcane and also on the efficiency of juice extraction.
According to statistics, high quality of 100 kg sugarcane yields almost 50 kg of sugarcane juice with 22% of sugar, and 10 kg of jaggery, whereas poor quality cane, yields 40 kg of juice with 17% sugar per 100 kg of cane and only 7 kg of jaggery.
The weights of the jaggery, juice, and cane can be related as follows:
10 kg jaggery = 100 kg cane * 50 kg juice/100 kg cane * 19% sugar in juice/95% sugar in jaggery
