Explanation:

Most plants also have other pigments: carotenoids, which usually appear yellow to orange, and anthocyanins, which are red to purple. ... So a plant with red leaves probably has higher than usual amounts of anthocyanins, Dr. Pell said. But chlorophyll is still present and at work.

Pigment

Yes, chlorophyll is present in red amaranthus. The amount of chlorophyll is comparatively less in red amaranthus than any other green leaves. Other pigment masks the chlorophyll which is responsible for the green color of the leaves.

The pigments that are responsible for dark color or red violet color of leaves  have higher antioxidants pigments and phytochemicals such as vitamin C, TPC, and TFC showed greater antioxidant activity. They have carotenoids/anthocyanin in huge amount.
