Oxidation will be the major cause of rancidity for pickle even after it has been made properly. fatty cooking oils used in pickle preparations will have mono unsaturated fatty acids (MUFA) & poly unsaturated fatty acids (PUFA). One molecule of MUFA contains one double bond, making it somewhat vulnerable to oxidation, But Each molecule of PUFA has more than one double bond making it most reactive to oxidation The UV rays from sunlight, florescent lights, and other sources accelerate oxidation process. Because of this the storage container container for pickels must be opaque to filter out UV rays.  Heat also accelerates oxidation process.Ideally pickles must be stored in a dark place with ambient temperature near or below 68° F. So,Preferably pickles must be stored in a glass jars to avoid sun light.
