Summer squashes grow rapidly and, for best flavor, need to be harvested daily as immature fruit between 4 and 6 inches in length for yellow squash and zucchini, and 4 inches in diameter for patty pan varieties. Allowing the squashes to get larger slows down fruit production and decreases the plant's yield. Winter squashes must mature on the vines; this takes 70 to 110 days, depending on variety. Vine-type winter squashes typically produce 30 pounds per hill, while bush types only average 5 pounds per hill.

Bush varieties of squash are easier to harvest than vining types because the fruit clusters near the center of the plant. Vining varieties ramble throughout the garden, requiring a lot of bending and searching, which increases the chance you'll miss them. It's also harder to cultivate around vining types, so be sure to mulch their allotted space thoroughly to control weeds. Use black plastic mulch in cool-season areas to speed plant growth and fruit development
