Compost manure is usually made from animal manure and organic matter (yard clippings, leaves, kitchen scraps, etc.) which is placed in a heap or container, which is regularly aerated and decomposed until it is rich, dark and sweet. At the simplest level, the composting process requires a heap of wet organic matter, such as leaves, grass and food scraps, and after a period of months, waiting for the materials to break down into humus. Composting can also be carried out as a multi-step, closely monitored process with measured inputs of materials rich in water, air and carbon and nitrogen. The process of decomposition is helped by shredding the plant material, adding water and ensuring proper aeration by regularly turning the mixture when using open piles or "windrows." The material is further broken up by earthworms and fungi. Oxygen-requiring bacteria and fungi manage the chemical process by converting the inputs into heat, carbon dioxide, and ammonium.
Green manure is a crop seeded, grown and the plowed or transformed into the ground where it was grown. Green manure can add nitrogen (legumes such as alfalfa, clovers.sweet clovers, peas, beans etc.) to break up hard pans (tap root and long rooted plants such as Daikon, sweet clover etc.) to catch excess nitrogen while adding organic matter to the soil with sorghum, oats etc. Green manures can also hold soil in erosion-sensitive areas and give pollinators a much needed food source.
