Pasteurization is a process of heating a food, and then cooling it immediately. The process slows down the growth of microorganisms. It is done for the food safety reasons in industry.
Fermentation in the food processing typically is the conversion of the sugars to alcohols and carbon dioxide or organic acids using those organisms that are not obligatory anaerobes such as yeasts under anaerobic conditions(without oxygen).
