Lactobacillus delbrueckii subsp. bulgaricus is traditionally used in fermented foods and is a commercially important bacterium. In yoghurt production, it works together with Streptococcus thermophilus and converts milk into the final product by synthesising acid, peptides and many other compounds (Ardo, 2006).
