Scrambled eggs- when you beat the egg yolks and whites together and cook them in a greased pan (usually greased with butter). Usually people will add some milk to them.
Poached eggs- one of the most difficult ways to prepare eggs that I've tried. You boil water, then crack the egg into the water, letting the water cook the egg. Don't touch the egg, and be careful when you crack it, because it will probably feather (the whites of the egg will go into feather like strands). The best technique that I've found is boiling the water, then lessening the heat to about medium temperature till the water has a still surface instead of the roiling movement of the boiling. This lessened the feathering a bit. Try lowering the egg into the water with a large, very dipped spoon.
