quick freezing Rapid freezing of food by exposure to a blast of air at a very low temperature. Unlike slow freezing, very small crystals of ice are formed which do not rupture the cells of the food and so the structure is relatively undamaged.

Difference between quick freezing and slow freezing .

Explanation:

Quick freezing is done instantly with dry ice while slow freezing is putting it into storage (like a large freezer just like your own) and freezing it slowly.

The demerits of fast freezing include the use of more energy and non-uniform freezing. The merits are that substances are kept from going bad quickly. Slow freezing is quite time consuming but allows for uniform freezing.
