Squid are cephalopods of the order Teuthida, which comprises around 304 species. Like all other cephalopods, squid have a distinct head, bilateral symmetry, a mantle, and arms. Squid, like cuttlefish, have eight armsarranged in pairs and two, usually longer, tentacles. Squid are strong swimmers and certainl species can "fly" for short distances out of the water.

Squid is cheaper and tougher; calamari is more tender and expensive. Squid is generally Nototodarus gouldi, also known as Gould's squid, but a species named Teuthoidea is also targeted. Calamari come from the genus Sepioteuthis. You can see the word "sepia" in the name, which refers to their ink.
