I've always understood shish kebabs to be chunks of unminced meat skewered and cooked over hot coals or a grill. Seekh kebab is I believe, the south east Asian equivalent of what Arabs and Turks call Kofta kebab which is minced, seasoned meat, shaped over a skewer and cooked.
