Single: one rocket, like the German V-2 from the WWII
2 stages: A small rocket launched by a big one.
3 stages (like Saturn 5) A big rocket launches a mid size one, then the mid size launches a smaller.

The Saturn5 included another rocket but it was for landing in the Moon. The descending module was somehow a two stage rocket cause the main tank was left in the Moon.

The Space shuttle is a three stages rocket too, but the second stage is the big tank, that is used in the take-off, and have no engine, but uses the third stage engine. The first stage are the two solid fuel boosters, and the last stage is the shuttle itself, with the engine for the whole flight
