A water mill runs at slow to medium speeds. While a modern day mill runs at high speed.
A water mill usually had natural stone as the millstone while the modern flour milling uses Emery stones , steel rollers , pulverized.
The daily output from a water mill was a few 100 kilograms , while a modern day flour mill can produce 100 times more.
The output flour temperature from a water mill is way too low as compared to flour mills , and the nutrient profile of the flour from a water mill is better as compared to a modern day flour mill.
