Different gases go into the leaf with CO2 , so do they also combine with hydrogen and oxygen produced by the photolysis of water?
If no, then how does the plant differentiate between CO2 and other gases?

The plant itself doesn't differentiate. As it turns out, the other gases simply fail to react with hydrogen and oxygen.
