Since Copper is lower than Hydrogen in the reactivity series so it cannot liberate Hydrogen. Equation for this-
Cu(s) + HCl(aq)--------> no reaction

In the case of Iron, Iron is placed above hydrogen thus it can liberate hydrogen in reaction with Hydrochloric Acid. Equation for this-
2Fe(s) + 6HCl(aq) -------------> 2FeCl2(aq)+ 3H2(g)
