Hard substances have a fixed/definite shape and it does not change shape when pressure is applied to it.

Soft substances DON'T have a fixed shape as when pressure is applied to it changes its shape to make room for the matter putting pressure on it to make more space but it's volume stays the same

Hard substances: Diamonds and Bones

Soft Substances: Water and table salt
