in save option you save the document or file as defoult like if you are using photoshop defoult type to be saved will be PSD but using save as you can save it in other extension or type like jpeg or png or some else

same happens with the document  like if you save a document named document1 it will be saved as document1 if you want to save  same file with another name you will use save as option and you can save the same file with another name like document2
