Evaporation and crystallization are only some of the physical changes of matter. Other changes are condensation, sublimation, freezing or solidification, melting and sublimation. 


Evaporation is the change of a gas to a liquid. Example is the seawater evaporating and forming into clouds.The opposite of this process is called condensation. This is the changing of a gas to a liquid. The clouds in the sky form liitle droplets, or condenses and form little droplets of water and then fall if the cloud is big and the cloud cant hold the droplets.This process is called precipitation. 
Volatile liquids evaporate more rapidly than others at the same temperature. Such liquids have relatively weak intermolecular forces.
In general, the rate of evaporation depends on the strengths of the intermolecular forces and the rate at which heat is supplied. 


Crystallization is the change of a gas to a solid. Example is the dry ice. It is from a gas known as the carbon dioxide becoming solid because of a low temperature and forming a solid substance known as the dry ice. Sublimation is the turning of a solid to a liquid. As the dry ice warms, it sublimates and turn into gas. And this shows sublimation. 

Crystallization is the (natural or artificial) process of formation of solid crystals from a uniform solution. Crystallization is also a chemical solid-liquid separation technique.

Evaporation is a process of conversion of liquid in gaseous vapor form in the presence of heat whereas the crystallization is a process of formation of solid crystals from a precipitating solution. Evaporation occurs on the surface of the liquid but crystallization occurs on the entire solution.
