Role of the emulsifier in the preparation of an emulsion;

The role of emulsifiers is to form an adsorbed layer around the emulsion droplets. This adsorbed layer lowers the interfacial tension, which aids emulsification, and stabilizes the droplets against flocculation and coalescence. Emulsifiers need to be surface-active, so that they will naturally assemble at an interface.

preparation of an emulsion;

An emulsion is prepared by shaking strongly the mixture of the two liquids or by passing the mixture through a colloid mill known as the homogenizer. The emulsions thus prepared from the pure liquids are usually not stable and the two liquids separate out on standing.
