soap is normally long fatty acid chain with sodium ion at its end . When you rub soap it generate electro static charge and it attract dirt.
where as detergent normally are chemicals to dissolve dirt . It is not required to rub it on cloths.
But we normally have mentality that we have to rub to clean dirt.
Soap and detergent both falls under the category of 'Surfactants'. Technically , they reduces the surface tension of water. So oil/dirt is easily removed from the surface of the cloth and drained off by water.
Soap is mostly made from natural products like fat. Soaps are alkaline in nature as their pH is 9-10 .( pH meter is used to identify the acid or basic nature of any chemical product). Because of this pH rating, soaps are known to be natural cleanser.
Detergents are mostly made from petroleum products and alcohols. Detergents are usually mixed with synthetic, artificial fragrances to make them more appealing. Detergents stick to oil, dirt, grease very firmly and pull out them into the water. So they seems to be very effective as there is very little need for rubbing cloth.
