no all substances doesn't change from solid to liquid and liquid to gas on heating
when solid changes to liquis it is ccalled melting
when liquid changes to solied it means freezing
but some substances undergo a process called sublimation ..it is the process by which solid directly changes  to gas and gas changes back to solid directly
eg,camphor,naptholen
