Anything that has mass and occupies space is matter.It doesn't matter whether out or in.

Yes, these all are the matters
According to definition of matter everything which has a mass and occupies some space is matter
So as the water leaves , stones air as well as the smoke all have the some mass of their own and occupy some space so these all are the matters.
Whether a thing is places in or out of something , this is not affect the reality that it is matter.
