● In centrifugation, the mixture containing suspended particles is rotated at a high speed in a centrifuge. The heavier particles (here, cream) settle down at the bottom of the container and can be easily separated. Actually, when milk is rotated at a high speed, the cream collects in the middle and is removed through an outlet.

during centrifugation of milk, since the cream is heaver than milk it settles down at the bottom and milk which is relatively lighter remains at the top , this is due to difference in densities of milk and cream... the milk at the top will have less fat content
