this is due to osmosis means when we add salt water is released from the vegetables because in osmosis molecules moved fromm region of higher concentration to lower concentration

adding salt made the concentrartion of salt higher in outside membrane of vegetables than in inside. (more salt, less water)
as a result due to the process of osmosis,water from vegetable comes outside making it softer and helps in faster cooking.
