We know that the ripening of fruits occur due to the presence of ethylene gas.
It triggers more enzymes which triggers the ripening of a fruit. During ripening, the chlorophyll which is responsible for the green color breaks down along with the acid molecules which is responsible for the sour taste and turns into red or yellow color due to formation of more pigment and makes the fruit taste neutral.
