During ripening of the fruit the colour changes from green to yellow or red because when the fruit is raw or unriped it contains large amount of chlorophyll ( green coloured pigments) which makes the fruit look green but when the fruit gets ripened, these green coloured pigments disappear and synthesise another pigment named carotenoid and anthocyanins which gives yellow or red colour to ripe fruits.
