he doers so to prevent the milk from turning curd.. milk usually has some amount of lactic acid which helps it to turn into curd but when some amount of baking soda is added it helps in neutralizing the reaction and prevents the formation of curd.

Becoz baking soda is a base which reacts with acids and neutralizes it . This prevents milk from getting sour and keeping it fresh for long time....
