When we keep water in earthen pot in summer, water seeps out from the very tiny pores in the pot and evaporates from the outer surface of the pot. Some energy is required in order to evaporate that outer surface water and that energy is taken from the heat of water inside the pot. In this way the heat of water stored inside a pot lost and water becomes cool quickly.
