Evaporation.....durrring this process it used the surface temperature to evaporate quickly and as a result it intakes the surface warm and cools down the suface..the evaporation takes place through the tiny pores present in the surface of the earthen pot...and hence earthen pot is cool

Water looses its temperature through small pores present in the pot. Hence in an earthen pot (matka) become cool during summer.
