during hot summers water is usually kept in an earthen pot called pitcher or Matka to keep it cool that it is because the earthpot has largest number of extremely small pores in its walls some of the water continuously keep seeping through this pores to outside of the pot this water evaporates continuously and take the latent heat required for the vaporization from the Earthenpot and the remaining water .in this way the remaining water loses heat and get cold this is also an example of cooling caused by evaporation .
