In fact, the shape of the engine nozzle needs to be a different shape at different altitudes and air pressures for maximum efficiency. It would be hard to design an engine nozzle that worked from sea-level to orbit. So the staging is really the only way to get to space. Single stage rockets just can't go high enough.
