The head of the cauliflower is mainly consumed. The head is composed of a white inflorescence meristem. The head of the cauliflower resemble that of  broccoli, the difference being that in broccoli the flower buds is the edible portion whereas in cauliflower it is the inflorescence.  The edible white flesh is often referred as  "curd"  with a similar appearance to cheese curd.
