The answer is TRYPSIN ...as the food enters he small intestine an alkaline medium is required for trypsin to break the the fat molecules and globules into smaller particles and the bile juice secreted by pancreas achieves this. Thus trypsin is the enzyme responsible for carbohydrate digestion in small intestine.
