Hydrophobic r water hating/fear substances.

The structure of lipid is as : hydrophilic head and hydrophobic tail . In Intercellular spaces and inside the cell, water is present,so there is no chance that the tail will be against water . Only one possibility comes forward, the heads(hydrophilic) being outside and the tails(hydrophobic) being inside. As by FLUID MOSAIC MODEL .

So, hydropbhilic substances find it difficult to pass into/out the cell because of the hydrophobic tail.
