Water is very convenient for explaining changes of state. We see water as solid, liquid and as a gas in daily life.

As a solid we call it ice. To change state to liquid is to melt ice. This happens at 0 degrees Celsius. To boil water changes state from liquid to gas which happens at 100 degrees Celsius. We call this gaseous state steam.

We can go in the other direction, by condensing steam to liquid and freezing liquid to ice.
